Simply sitting in the presence of Love.
As thoughts come into my mind I gently release them and return to the presence of Love.
Well... sounds easy to do, but grrr... really my brain is like a busy supermarket on sale day.
Sometimes it helps me if I have a 2-3 word phrase to repeat to myself to get back into my own little zone. It is important not to evaluate but simply release any interference. Forget about it for now.
Just to be.
Eyes closed, natural back posture, breathe in the good and breathe out anything bad.
It is important for us to remember these moments. Its actually helping me feel a lot calmer about things!

Lemon & Sugar Pancakes
Preparation Time - 10 minutes,
Cooking Time - 30 minutes,
Makes - 12.
- 2 cups self-raising flour
- 1/2 cup plain flour
- 2 tbs caster sugar
- 2 1/3 cups milk
- 80g butter, melted, cooled
- 1 egg, lightly whisked
- Extra melted butter
- Extra caster sugar, to serve
- Lemon wedges, to serve
Method
- Sift flour into a bowl. Add sugar and stir well. Add milk, butter and egg. Whisk until well combined.
- Brush two small non-stick frying pans with a little of the extra melted butter. Heat over medium heat. Add 1/3 cup of mixture to each pan. Cook for 2 minutes, or until bubbles appear on the surface. Carefully turn over and cook fro 1 minute.
- Transfer pancakes to a plate and wrap loosely in a clean tea towel to keep warm. Repeat with remaining batter, greasing pan between each batch. If you find the pan is getting too hot, reduce heat slightly.
- Serve pancakes with lemon and sugar.

Pain, Failure

Hope for what we can't see
So we're not giving up. How could we! Even though on the outside it often looks like things are falling apart on us, on the inside, where God is making new life, not a day goes by without his unfolding grace. These hard times are small potatoes compared to the coming good times, the lavish celebration prepared for us. There's far more here than meets the eye. The things we see now are here today, gone tomorrow. But the things we can't see now will last forever.

The Beautiful letdown
Doing the wedding invites would have to be the hardest part of preparing for the wedding. Because of course you want everyone to be there, but its just not affordable. I don't want to miss anyone out but yet I don't want the Reception to be far to crowded.

Valentines Special
My Special Valentines Day cookies!
The Recipe:
250g Butter
1/2 Cup icing sugar
1 Cup of Cornflour
2 Cups of Plain flour
3 Tbs Condensed Milk
1/2 Cup Pink and White M&M's
For the chocolate cookies just add an additional
1 tbs Cocoa powder
1 tbs Condensed Milk
Directions: Pre-heat oven to 180oC. Sift flours, and icing sugar together in a electric mixer bowl, mix in the other ingredients. Take away half of the mixture before adding the ingredients for the chocolate cookies.
Cut into hearts and cook for 10mins. Makes about 25. Easy and Yummy!

Triple Chocolate Skillet Cookie Brownie Slice thing....
Taken from a Donna Hay Recipe, I created a beautiful Brownie for Reiko's (My house mate from Japan) going away party.
250g Butter softened
1 1/2 Cups Caster Sugar
1 tsp Vanilla essence
2 Eggs
2 Cups Plain Flour
1/2 Cup Cocoa Powder
1/4 Cup Chopped Roasted Hazelnuts
1 Cup Chopped Milk Chocolate
1 Cup Chopped White Chocolate
250g Butter softened
1 1/2 Cups Caster Sugar
1 tsp Vanilla essence
2 Eggs
2 Cups Plain Flour
1/2 Cup Cocoa Powder
1/4 Cup Chopped Roasted Hazelnuts
1 Cup Chopped Milk Chocolate
1 Cup Chopped White Chocolate
Preheat Oven to 180oC. Place butter, sugar and vanilla in the bowl of an electric mixer and beat until light and creamy. |
Add the eggs and beat well. Sift the flour (don't over look the sifting!) and cocoa over the mixture |
Add the nuts and chocolate bits. |
Mix well. |
Press down into a lightly greased 19cm flat, oven proof frying pan. (I used a cake tin) |
Bake for 35mins, or until cooked through. |
Cool and cut into wedges.Serves 8-10. |
